Wine making process of each variety separately respecting the oenological maturation of each of them.Cold macerationduring 48 to 72 hours for a first extraction of aromas, tannins and colour compounds. Fermentation at controlled temperature below 20aC , with selected yeasts. Well balanced and perfect to pair with a wide range of dishes.
