This natural sparkling wine is made by the Champenoise method with our own grapes produced in our Canelón Chico vineyard. The wine is made from two varieties Chardonnay and Pinot Noir that are manually harvested at the right point of ripeness, making a selection of the best bunches.
The juice is obtained by direct pressing, and is fermented at a controlled temperature of 11 to 13 ºC with selected yeasts, thus obtaining a high quality base wine with the fruit and freshness of Chardonnay and the structure and volume of Pinot Noir.
In May we start the second fermentation in bottle, we use a vat foot with selected yeasts to make foam, and then we deposit it in our cellar during the fermentation process and lees aging. After 24 months of rest, we finally proceed to remuage and then to degustation without the addition of expedition liqueur, thus obtaining a brut nature, harmonious, elegant, complex, and very persistent.

Tasting Notes: Golden color, fine bubbles, elegant and persistent. Complex nose, harmonious and delicate. Fresh aromas of apple, smoked variety and floral. In the mouth it is very pleasant and fresh with significant volume and an enveloping middle in the mouth. Elegant and persistent (a champagne delight).
