The Southern Festival is inspired by the Uruguayan Candombe, a generic name given to the different dances of African origin in Uruguay, and was born from the conjunction of more than twenty African peoples brought as slaves to this region of the southern cone. Each one of them had their own language, their own way of being and feeling, their own culture, and their own dances.
We manually harvest the grapes produced in our vineyard at their maximum maturity. Upon entering the winery, we make a selection of the bunches, ensuring that only the highest quality bunches are part of the elaboration.
Cold maceration for 48 hours for a first extraction of aromatic compounds and colorants. Then we sow selected yeasts, alcoholic fermentation for seven days in contact with the marcs, where we achieve the desired color and structure.
