Grapes from our vineyard collected manually in the early morning with the purpose of arriving to the winery still at low temperatures, enabling skin maceration before pressing.
Subsequent removal of cold settling and inocculation of selected yeasts. Cold fermentation at 13 °C / 55 °F during 18 days.

Acidity: 4.5 gr/l
Sugar: 3.0 gr/l
Color: greenish metallic yellow
Aroma: tropical fruit, peach, passion fruit, very present scent to flowers.
Mouth: good acidity, fresh, fruity, round and very persistent.
Harmonious match with seafood, fresh fish, ceviche.
Serving temperature: 11 to 12 °C / 52-54 °F
