Vinificación tradicional de cada variedad por separado en búsqueda de la máxima expresión de cada variedad. En los primeros 12 meses de crianza las variedades realizan su añejamiento por separado en barricas de roble francés. Al cabo de este tiempo los enólogos realizan el corte final y en su conjunto realizan una nueva  crianza de 6 meses en roble francés.
