Sparkling Wine Pizzorno Brut Nature Rosé

This natural sparkling wine is made by the Champenoise method with our own grapes produced in our Canelón Chico vineyard. The wine is made from two varieties Chardonnay and Pinot Noir that are manually harvested at the right point of ripeness, making a selection of the best bunches. The juice is obtained by direct pressing, and is fermented at a controlled temperature of 11 to 13 ºC with selected yeasts, to obtain a high quality base wine with the fruit and freshness of Chardonnay and the structure and volume of Pinot Noir. In May we start the second fermentation in bottle, we use a vat foot with selected yeasts to make foam; we deposit it in our cellar during the fermentation process and lees aging. After 24 months of rest, it is finally remuaged and then deglazed without the addition of expedition liqueur, thus obtaining a brut nature, harmonious, elegant, complex, and very persistent. Production: 1.500 bottles. Tasting Notes: Golden color, fine bubbles, elegant and persistent. Complex nose, harmonious and delicate. Fresh aromas of apple, smoked variety and floral. In the mouth it is very pleasant and fresh with significant volume and an enveloping middle in the mouth. Elegant and persistent (a champagne delight).

Sparkling Wine Pizzorno Brut Nature Classico

The base wine was selected through a blend of Chardonnay and a small percentage of Sauvignon Blanc made in February. In May we proceeded to the second fermentation with selected yeasts in the bottle, fermented by the traditional method, remaining on the lees for at least seven months. Then, as soon as the bottle and its contents rest, we proceed to remuage, i.e., each one alternately moves an eighth of a circumference on its longitudinal axis in an inverted position at 45º every day. This allows the leftovers from the second fermentation to come off the bottom of the bottle and be deposited in the bottle spout. In November, we carry out the final dégorgement process. Each variety offers different characteristics, Chardonnay gives its aroma and body and Sauvignon Blanc its fruit and complexity. Tasting Notes: Its aroma is a balance between fruit and yeast, as it is a sparkling wine of the year and its contact with the lees was seven months; in the mouth it presents itself with good acidity and structure and repeats the balance between fruit and yeast with a long and pleasant finish. Its pearliness is fine, elegant and persistent.
