La Fiesta Sur Cabernet Sauvignon

The Southern Festival is inspired by the Uruguayan Candombe, a generic name given to the different dances of African origin in Uruguay, and was born from the conjunction of more than twenty African peoples brought as slaves to this region of the southern cone. Each one of them had their own language, their own way of being and feeling, their own culture, and their own dances. We manually harvest the grapes produced in our vineyard at their maximum maturity. Upon entering the winery, we make a selection of the bunches, ensuring that only the highest quality bunches are part of the elaboration. Cold maceration for 48 hours for a first extraction of aromatic compounds and colorants. Then we sow selected yeasts, alcoholic fermentation for seven days in contact with the marcs, where we achieve the desired color and structure.

The Southern Festival is inspired by the Uruguayan Candombe, a generic name given to the different dances of African origin in Uruguay, and was born from the conjunction of more than twenty African peoples brought as slaves to this region of the southern cone. Each of them had their own language, their own way of being and feeling, their own culture, and their own dances. Made with grapes from our vineyards, harvested with excellent ripeness by hand in 18-kg boxes. De-stemming and crushing, cold maceration for 24 hours, then selected yeasts are sown, and alcoholic fermentation begins for eight to ten days at controlled temperature (23 to 26 ºC), final soft pressing.

La Fiesta Sur Merlot Rosé

The Southern Festival is inspired by the Uruguayan Candombe, a generic name given to the different dances of African origin in Uruguay, and was born from the conjunction of more than twenty African peoples brought as slaves to this region of the southern cone. Each one of them had their own language, their own way of being and feeling, their own culture, and their own dances. Rosé made from Merlot grapes from our central vineyard located in Canelón Chico, Canelones, Uruguay. A short maceration of four hours in contact with the marcs, extraction of the liquid that will begin the fermentation at controlled temperature (13 ºC), reaching an intense pink color with salmon tones, preserving the floral and fruity aromas of this variety. It achieves a good structure with a medium body.

Each one of them had their own language, their own way of being and feeling, their own culture, and their own dances. Grapes produced in our vineyards in Canelón Chico, southern Uruguay. Manual harvesting in the early hours of the morning, making it possible to start production at low temperatures, favoring maceration of the skins before pressing.
